The Remedy

 I had hoped to be posting about Eric's longboard race that was on the calendar
for this weekend, but he came down with a bad head cold.  :-(
I thought I would make a "remedy" soup for him to help him feel better.
 
When I am sick a good chicken soup is so comforting.
I do have a favorite go-to recipe, but this Remedy Soup is a bit different, but every bit as comforting.
A few key ingredients make it a healing soup.
 
 
It begins like most ~ sliced celery, carrots
{ I had multi -colored carrots from Trader Joe's }

and onions in a pot with olive oil.
 

  Now add 5-6 cloves of minced garlic.
 
 
 Cook until the celery and carrots begin to soften.
 
Add some fresh ginger { peeled and chopped }
 

 
 { though you can use dried ginger instead = 3/4 teaspoon. }
 
Add cooked chicken { 2 cups or more }
 
 
 and chicken stock. { 6-8 cups } See my post on how to make
homemade bone broth here.
 
{bone broth is best, but store bought broth can be used too. }
 
Bring to a boil and then simmer for about 10 minutes.
 
  Add the seasonings ~ salt and pepper to taste,
and thyme and savory { 1 teaspoon each } 
 

 and cayenne pepper {1/4 tsp.}


Combine 1/4 cup of flour with 3/4 c. of water.  Add to the soup and stir until thickened.
If you need it to be gluten free, use rice flour instead of regular flour.

Depending on if you want Chicken with Rice soup ~ add cooked rice or
Chicken Noodle soup ~add noodles. { 1/2 bag }

 
It's an easy soup to throw together.  It's quick too, if you have chicken broth and cooked chicken on hand.
