Friday Night Pizza Night

When our big kids were little, Eric and I looked for ways to cultivate our family identity and unity.  One of the things we started was homemade pizza every Friday night along with games or a movie.  It became a tradition.

20 years later our pizza night is still going strong (no, Hannah and I can't eat it anymore, sadly!)   :-(     

A few weeks ago a blogger featured this pizza recipe.  The kids love pizza and never seem to tire of the few recipes I rotate through, but I thought I'd give this new recipe a try. 
It was a hit!

I'm posting today so that you can make it for your Friday night pizza night.  (sorry for some of the bad photos...)


BBQ chicken luau pizza

First make your dough (or use dough purchased from the store, if you prefer. )
If you need a recipe you can use mine.  You can find it here



 Roll out your dough (Eric likes to put cheese in the crust.)


Mix some BBQ sauce with cooked shredded chicken. 


and reserve some sauce to put on the dough. 


The next layer is the BBQ chicken


 
followed by chopped pineapple (I used a can of pineapple tidbits.)



Bake in a 500 degree oven for about 10 minutes. 



Then cover all with shredded mozzarella and cheddar cheese and cooked, chopped bacon.


Bake another 10-15 minutes until the cheese is melted and lightly browned.

A little side note:  I bought Trader Joe's BBQ sauce.  The littles thought it was a bit spicy. Next time I make this, I will use Trader Joe's Carolina Gold BBQ Sauce - it's mild and slightly sweet.
